Olive trees are among the oldest cultivated trees in the world, living for hundreds — and sometimes thousands — of years. The oldest known olive tree, found in Crete, is believed to be over 2,000 years old, with some estimates placing it closer to 4,000. These trees are not only enduring, but deeply symbolic of resilience, continuity, and life in the Mediterranean.
Despite their strength, olive trees begin delicately. The flowering stage is particularly sensitive, with wind and weather playing a crucial role in determining the success of each year’s harvest. A sudden shift in climate can significantly affect production. Yet beneath the surface, the tree tells a different story — its roots are remarkably resilient, capable of surviving even the harshest conditions.
Olives themselves are often misunderstood. Though commonly grouped with vegetables, they are in fact a fruit. And unlike many fruits, they are not immediately ready to be eaten once picked. Fresh olives must be cured, brined, or fermented to develop their characteristic flavor and texture.
Patience is also required in cultivation. Olive trees typically begin producing fruit after three to five years, but once mature, they can continue to yield for centuries. In Tuscany, the average lifespan of an olive tree ranges between 300 and 600 years, with groves often passed down through generations.
The region is known for four primary olive varieties — Frantoio, Moraiolo, Leccino, and Pendolino — each contributing to the balance and character of Tuscan extra virgin olive oil. Across Italy as a whole, however, there are more than 400 distinct olive varieties, reflecting the country’s extraordinary biodiversity and deep-rooted agricultural traditions.
Olive trees thrive in climates defined by warm, dry summers and mild winters, which is why Mediterranean countries have long been at the heart of olive oil production. Even so, nature can still leave its mark. In 1985, Tuscany experienced an unusually severe winter that damaged nearly 90% of its olive trees, forcing many groves to be replanted — a reminder of both the vulnerability and resilience of the landscape.
From their ancient roots to the oil on the table, olive trees embody a quiet endurance. They are shaped by time, weather, and care — and in turn, they shape the flavors and traditions that define life across the Mediterranean.
