Italians know their way around the kitchen and don't let anything go to waste. Panzanella is a rustic bread salad that was designed to minimize waste by using stale bread.
Traditionally, this is a summer dish but since the warmer weather is lasting a little longer these days, we decided on one last summer dish before we head into some heartier recipes for fall.
Not only does panzanella allow you to use up your day-old bread, but it is super easy as well! One of our favorite (and old-school traditional) panzanella recipes comes from the Food52 blog and a Tuscan food hero, Emiko Davies.
